Roasted Asparagus.
Serves: 4+
Ingredients
about 20 asparagus
spears (one package, about 1 pound), trim off bottom 1-inch or so. Peel
lower half of spears if asparagus is at all tough.
dash salt
about 1/8 teaspoon black pepper
olive oil
about 1 tablespoon butter
about 1 teaspoon soy sauce
about 1/2 teaspoon balsamic vinegar
Directions:
1. Preheat oven to 400
degrees. 2.
Arrange asparagus in a single layer on a baking sheet; lightly coat with
olive oil. 3.
Sprinkle with salt and pepper to taste.
4. Bake for 10-12 minutes or until
tender. Do not overbake. We like asparagus to be a bit crispy but not
raw. 5. Near end
of bake cycle, add butter to pan; cook 3 minutes or until butter is
lightly browned, shaking pan occasionally.
6. Remove from oven; stir in soy sauce and
balsamic vinegar.
7. Toss well to
