Flounder with mushrooms and tomatoes

Baked flounder with mushrooms and tomatoes

A very simple flounder recipe.

Recipe

bullet2 flounder filets
bullet4-5 sliced mushrooms
bullet1 medium tomato, sliced thin
bullet2-3 tablespoons chopped onion
bullet2 tablespoons dark or Dijon mustard
bullet2-tablespoons capers
bullet2 tablespoons white wine
bullet2 tablespoons lemon juice
bulletvegetable oil spray
bulletolive oil

Preheat oven to 350 degrees.

Coat shallow baking dish with vegetable spray.  Place flounder in baking dish.  Spread mustard on fish. Cover with mushrooms, chopped onion, tomato slices, and capers.  Pour wine and lemon juice over fish, and lightly dribble olive oil.

Bake 20 minutes or until fish flakes.

Serve with rice.
