Baked Cod Filets with Basil

Finding easy, tasty, really quick, fish recipes is often a challenging.  This is one that Richard likes.


  • ~1/2 lb. cod fillet

  • ~1 table spoon olive oil

  • Juice from 1 lime

  • fresh basil leaves

  • black pepper

  • Dash salt

  • 1 tomatoes sliced 


Pat fish dry and cut into 2 serving pieces.  Combine oil and lime juice in a baking dish.  Add fish and turn to coat both sides. Sprinkle with pepper and salt.  Place basil leaves and sliced tomatoes in two layers on fish (basil next to fish).  Bake uncovered at 450F, about 10 to 15 minutes or until fish just begins to flake when tested with a fork.
