Ham Steak with Apples

I'm a fan of the 30 minute, simple supper.  This recipe fills the bill.

Recipe

  • 2/3 cup cranberry, apple-cranberry, or cranberry-grape juice

  • 1 tablespoon honey (or brown sugar, or molasses)

  • 2 tablespoons lemon juice

  • 1 1/2 tablespoons mustard (such as Dijon)

  • 1 1/2 teaspoons corn starch

  • 1 small onion, chopped

  • 1 apple, peeled, cored, and chopped fine

  • 1 ham steak, cut into serving sizes

  • 2 tablespoons butter (or combination of butter and olive oil)

  • 1/4 cup dried cranberries or raisins, if available

In a large skillet, brown ham in butter. Set aside on a platter.

While the ham is cooking, beat together with whisk -- juice, honey, lemon juice, mustard, and corn starch until well mixed.  Chop onions and apples.

After ham is removed from skillet, lightly sauté onions and apples.  Add juice mixture and raisins/cranberries, and bring to a light boil while gravy thickens and raisins/cranberries plump.

Return ham to skillet and cook another 1-2 minutes until heated through.  Return ham to platter for serving, spooning gravy over top.

Serve with microwaved Idaho potatoes (8-10 minutes) and steamed or lightly sautéd green vegetable.

Preparation time:  about 20 minutes.

Serves 3-4 people, depending on appetite.
