Ham Steak with Apples

In a large skillet, brown ham in butter. Set aside on a platter. While the ham is cooking, beat together with whisk -- juice, honey, lemon juice, mustard, and corn starch until well mixed. Chop onions and apples. After ham is removed from skillet, lightly sauté onions and apples. Add juice mixture and raisins/cranberries, and bring to a light boil while gravy thickens and raisins/cranberries plump. Return ham to skillet and cook another 1-2 minutes until heated through. Return ham to platter for serving, spooning gravy over top. Serve with microwaved Idaho potatoes (8-10 minutes) and steamed or lightly sautéd green vegetable. Preparation time: about 20 minutes.
